Recipe: Very yummy cake called “Russischer Zupfkuchen”

This is one of my farourite cakes. I am not quite sure people outside Germany know it. Unfortunately Internet with flavour has’nt been invented yet. So you have to believe me that it’s tasty.

Here’s the recipe:

For the dough:

  • 400 g wheat flour
  • 200 g granulated sugar
  • 250 g butter
  • 1 egg
  • 1 sachet baking powder
  • 40 g cocoa powder (unsweetened!)
    For the filling:
  • 500 g curd/quark (I use lowfat)
  • 250 g butter
  • 250 g granulated sugar
  • 3 eggs
  • 1 sachet vanilla sugar
  • 1 sachet instant flummery powder (vanilla flavour)
  • 1 pinch salt
Knead the dough using all ingredients. The butter has to be soft, so make sure you get it out of the ice box at least two hours before. If you forgot it, use the microwave at low power.
Take half of the dough to form the cake base in the springform pan.
Use the mixer for the quark filling and pour it onto the cake base. Pluck the remaining dough to pieces and throw them on the filling. (This is what we call “zupfen”.)
Bake for 40 to 60 minutes at 180 °C.
